What you need:
  • 1 package Trader Joe's whole wheat pizza dough (or whole wheat crust- the dough is cheaper)
  • 1/2 cup marinara sauce
  • Olive oil
  • Non-stick spray
  • Cornmeal (if you have some on hand)
  • Shredded soy cheese (your desired quantity)
  • A cookie sheet or pizza pan
Toppings: You can use any fresh vegetables you have in your fridge, either diced or thinly sliced, plus you can add some crumbled veggie burgers- yum! Here are some ideas: zucchini, mushrooms, corn, bell peppers, onions, tomatoes, spinach, olives, marinated or canned artichokes, crumbled Morningstar or Boca veggie burgers, etc. Directions: 1. Pre-heat oven to 450 F degrees. 2. Prepare your veggies. You can use them raw or quickly sauteed. 3. Roll out the dough on a large cutting board. Sprinkle some flour on the cutting board to prevent the dough from sticking. Your pizza doesn't have to be perfectly round. I always make mine rectangular to fit the cookie sheet. This is a thin-crust pizza. 4. Spray your cookie sheet with non-stick cooking spray or sprinkle some cornmeal on it to prevent the pizza from sticking. Spread the dough on the baking sheet and brush it with some oil. 5. Spread the sauce evenly on the dough, then add your toppings, and finally the cheese. Bake for 10 minutes. Tips: Don't use too much marinara sauce because it will make the dough too wet. The olive oil helps to moisten the dough just enough. Not all ovens are created equal so you may have to experiment with the baking time.

  1. I find it helpful when making a pizza to cook the dough a little bit on it’s own and add the toppings later this prevents a soggy crust.
