Baked Stuffed Apples

Stuffed baked apples are so delicious! You won’t miss the apple pie. I promise.
Ingredients:
- 6 medium apples (any kind of apples are good for this recipe)
- 3 tablespoons grape seed or olive oil
- 4 tablespoons agave nectar
- 1/4 teaspoon nutmeg
- 1/4 teaspoon ground cinnamon
- 1/2 cup chopped walnuts (sub. almonds, pecans, etc.)
- 1/2 cup whole wheat flour
- 1/4 cup oatmeal
- 1/4 Ezekiel 4:9 Original Crunchy Cereal
- 1/4 cup wheat germ or ground flax seed (optional)
- lemon wedges (optional)
Directions:
1. Preheat oven to 425.
2. Cut the apples in half lengthwise, remove the cores, and hollow out apples with an ice cream scoop, paring knife, or spoon. Do not hollow the apples too much.
3. Trim thin slice off back of each apple half so they sit flat on the baking dish. You can use parchment paper on the bottom of your dish.
4. Rub tops of apples with lemon to prevent browning.
5. Combine oil, agave nectar, plus all the dry ingredients and the spices in a bowl. The mixture will be crumbly.
6. Pack this mixture into apples and place in a shallow baking dish and bake for 17-20 minutes until the apples are tender but not too soft.
Easy Oaty Berry Crumble

Eat as is or use it as a yummy topping on your oatmeal or cream of wheat.
Ingredients:
- 2 cups frozen or fresh berries
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1 tablespoon whole wheat flour
- 3 tablespoons agave nectar (optional)
Crumble:
- 1/4 cup rolled oats
- 1/4 cup Ezekiel 4:9 Original Crunchy Cereal
- 1 tablespoon wheat germ (optional)
- 4 tablespoons whole wheat flour
- 2 tablespoon agave nectar (optional, the berry mix is very sweet)
- 2 tablespoons chopped nuts
- grape seed or olive oil
Directions:
1. Preheat the oven to 350 and lightly spray a mini loaf pan, ramekins, or baking dish to prevent sticking. You may use parchment paper.
2. In a bowl sprinkle the berries with the flour, agave nectar and spices, combine, and pour into baking dish.
3. Combine the crumble ingredients. You will need to gradually add a little oil until the mixture is crumbly. Place on top of the berry mixture.
4. Bake for about 25 minutes.
Banana Split
A Banana Split for breakfast? It’s not exactly what you had in mind, but this comes loaded with nuts and crunchy granola for a filling and very nutritious way to start your day. Your kids will definitely love it and you can even have it as a dessert.
Ingredients
- 1 banana
- 1 tablespoon nut butter (peanut, almond, etc)
- 1 tablespoon ground flax seeds or wheat germ
- 1 tablespoon chopped pecans
- 1/4 cup of your favorite whole grain, low sugar cereal (for the Daniel Fast you can probably get Ezekiel Crunchy Cereal)
- 1/2 cup berrries, fresh or frozen and thawed
- 1 tablespoon agave nectar, optional
- Soy or almond milk to taste, optional (you can use any non-dairy milk you like)
Directions:
Cut the banana in half lengthwise. Spread nut butter on each banana half and put it back together like a sandwich. Sprinkle the banana with ground flax, pecans and cereal. Top with the berries and agave nectar. Eat as is or with a splash of your favorite milk. Is this easy or what?
